Honey Spiced BBQ Sauce

1 1/4 c Catchup
2 tb Dry mustard
2/3 c Salad oil
3 ts Ginger, fresh grated
3/4 c Vinegar
1 ea Lemon, sliced thinly
5 tb Worcestershire sauce
3 tb Butter
1 c Honey

Combine all ingredients in a saucepan and heat to blend together.



Sweet 'n' Spicy BBQ Sauce

INGREDIENTS
2 cups packed brown sugar
2 cups ketchup
1 cup water
1 cup cider vinegar
1 cup finely chopped onion
1 (8 ounce) can tomato sauce
1 cup corn syrup
1 cup molasses
1 (6 ounce) can tomato paste
2 tablespoons Worcestershire sauce
1 tablespoon garlic pepper blend
1 tablespoon liquid smoke flavoring (optional)
1 tablespoon prepared mustard
1 teaspoon onion salt
1 teaspoon celery salt
DIRECTIONS In a large saucepan, combine all ingredients.
Bring to a boil. Reduce heat; simmer, uncovered, for 15 minutes or until the flavors are blended.
Remove from the heat; cool.




Hot Barbecue Sauce

1 1/2 c Tomato juice
1 Garlic clove, peeled
1/3 c Brown sugar
1/4 c Cider vinegar
1 Onion slice,thick
1 t Chili powder*
1/4 Green pepper,seeded
1 T Prepared mustard
1 Celery stalk
* - more if preferred.

1. Combine ingredients in a saucepan and let steam; keep just under simmering point for about 30 minutes.
Remove and discard onion, green pepper, celery, and garlic.

2. Brush sauce on meat or chicken during last 15 minutes of cooking.
If desired, spoon additional sauce over cooked meat when serving.




Smoker Sauce

It works on the barbecue, as well, or even as a marinade.
I like to keep this in a sealed jar in the refrigerator until I'm ready to use it."

INGREDIENTS
1 (18 ounce) bottle barbeque sauce
1/2 (8 ounce) jar salsa
1/2 cup soy sauce
3/4 cup packed brown sugar
1 teaspoon ground ginger
1 tablespoon crushed garlic
1 tablespoon coarsely ground black pepper
salt to taste

DIRECTIONS
In a large bowl, stir together the barbeque sauce, salsa, soy sauce, brown sugar, ginger, garlic, ground black pepper, and salt.
Store in a jar in the refrigerator until ready to use.
Use as a marinade or a basting sauce when smoking meats or fish.

Delicious Barbeque Sauce

1 tablespoon dry hot mustard

1 dash hot pepper sauce
DIRECTIONS In a medium bowl, whisk together taco sauce, white sugar, molasses, vegetable oil, cider vinegar, soy sauce, dry hot mustard, dried oregano and hot pepper sauce.
Chill covered in the refrigerator until ready for use.





Hot Georgia BBQ Sauce

1/2 c Lemon juice
1/3 c Vinegar'
1/4 c Ketchup
1/4 c Water
1 tb Brown sugar
1 ts Salt
1 ts Dry mustard
1 ts Paprika
1/2 ts Pepper
1/2 ts Cayenne
1/2 ts Onion powder
1/8 ts Garlic powder
1 ts Tabasco sauce
2 tb Butter

Combine all ingredients in a saucepan.
Heat to boiling point.
Use for BBQing chicken, pork, veal, beef or lamb.




Honey Bourbon Fire Sauce

"This recipe is not for weak-hearted individuals! This marinade/sauce will light your fire!
A flavor unequaled by even Kenny Rogers."

INGREDIENTS
1 onion, chopped
4 tablespoons garlic, minced
1 tablespoon butter
1 cup premium bourbon
32 ounces honey
1 (16 ounce) jar picante sauce
1 (16 ounce) jar hot salsa
2 (6 ounce) cans tomato paste
1 cup tomato-vegetable juice cocktail
2 tablespoons ground black pepper

DIRECTIONS
In a large saucepan over medium heat, saute the onion and garlic for 10 to 15 minutes, or until onion is caramelized.
Reduce heat to low and pour in about 1 cup of bourbon to deglaze the pan.
Return saucepan to medium high heat, add the remaining bourbon, and bring to a slow boil for 5 to 10 minutes, allowing the alcohol to cook out of the bourbon.
Add the honey, picante sauce, hot pepper sauce, tomato paste, tomato-vegetable juice and ground black pepper and stir well.
Bring this mixture to a slow, rolling boil for about 5 to 10 minutes.
Remove from heat, cover and cool in the refrigerator.
Marinate your meat in a separate large, nonporous bowl for 3 to 4 hours, pouring sauce over meat.
Boil remaining sauce for 10 minutes and serve with meat, if desired. Discard any excess marinade.




Jack Daniel's® Rib Glaze

1 c Jack Daniel's Whiskey
1 tb Lemon juice
1/2 c Dark brown sugar
3 ea Cloves, garlic, minced
1 c Catsup
1/2 ts Dry mustard
1 ts Worcestershire sauce
1/4 ts Black pepper
1/4 c Vinegar
1/4 ts Salt

Combine all ingredients:
Mix well.
Brush ribs with a thin coating of glaze and place on grill.
Continue to baste when turning ribs.
Makes enough for 2 racks of 7 to 10 ribs each.
Also great on chicken wings.

Jack Daniels® BBQ Sauce

1/2 lg Onion -- chopped
1/2 ts Pepper
4 Cloves garlic -- chopped
1/2 tb Salt
2 c Ketchup
1/4 c Tomato paste
1/3 c Vinegar
2 ts Liquid Barbecue SmokeAE
1/4 c Worcestershire sauce
1/2 ts Tabasco sauce -- to taste
1/2 c Brown sugar -- packed
Burbon or whisky -- to 3/4 c Molasses
Taste
Combine onion, garlic and burbon in a 3 qt saucepan.
Saute until onion and garlic are translucent, about 10 min.
Flame if possible.
Add all remaining ingredients, bring to boil, then turn down mixture to a medium simmer.
Simmer for 20 min. stirring constantly.
Run through strainer if you want a smooth sauce. Makes 4 cups.




Jamaican Barbecue Sauce

It's a great sauce for ribs

INGREDIENTS
1 bacon strip, halved
1/2 cup chopped onion
2 tablespoons chopped green onion
1 tablespoon chopped jalapeno pepper
1 cup ketchup
1/2 cup chicken broth
1/2 cup molasses
2 tablespoons cider vinegar
2 tablespoons lemon juice
1 tablespoon soy sauce
1 tablespoon Worcestershire sauce
1 tablespoon prepared mustard
1 tablespoon minced fresh thyme
1 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg

DIRECTIONS
In a saucepan, cook bacon over medium heat until crisp.
Discard bacon or save for another use. In the drippings, saute the onions and jalapeno until tender.
Stir in the remaining ingredients. Bring to a boil. Remove from the heat; cool.
Store in the refrigerator.
When cutting or seeding hot peppers, use rubber or plastic gloves to protect your hands.
Avoid touching your face.

Slam Dunk Sauce

"Sweet and pungent BBQ sauce for any light meat, pork, chicken, etc.
Use as a baste or marinade and serve on the side with charcoal broiled ribs, chicken, or pork."

INGREDIENTS
3 tablespoons mustard powder
1/4 cup wasabi powder
1 teaspoon salt, or to taste
1/2 teaspoon cayenne pepper
1/2 teaspoon ground black pepper
1/4 cup honey
1 (12 fluid ounce) can or bottle beer
3 cups ketchup
1/2 cup Worcestershire sauce
2 tablespoons lemon juice
1/2 cup finely chopped onion
1/2 cup chopped fresh cilantro

DIRECTIONS
In a medium saucepan, combine the mustard powder, wasabi powder, salt, cayenne pepper, ground black pepper, honey and 1/4 cup beer.
Mix well, then stir in the ketchup, Worcestershire sauce, lemon juice, onion and cilantro.
Place saucepan on the stovetop and bring to a boil over medium high heat.
Reduce heat to low and let simmer for at least 1 to 1 1/2 hours.
Pour in beer as needed to keep a consistency slightly thinner than ketchup.
